Steamed Pork Ribs With Black Bean Sauce

Ingredients
- 1 full tablespoon fermented black beans
- 0.5 bulb garlic
- 2 slices ginger
- 500g pork ribs
- 1.5 tbsp soy sauce
- 1 tsp oyster sauce
- 0.25 tsp salt
- 0.5 tsp sugar
- 1 teaspoon cornflour
- Taro (optional)
Steps
- Defrost the pork ribs.
- Soak the pork ribs in a bowl of water to draw out the blood.
- Squeeze out the blood — each rib has a vein with blood in it.
- Pour out the water.
- Finely chop the garlic, ginger, and fermented black beans.
- Prepare the soy sauce, oyster sauce, salt, and sugar.
- Dry roast the black beans in a wok until dry and fragrant.
- Add oil to the wok, then fry the chopped garlic and ginger until golden brown.
- Add the sauce mixture to the bowl of pork ribs.
- Put on a glove and massage the marinade into the pork ribs.
- Cover the bowl with cling wrap and let it marinate for 20 minutes.
- Pour hot water into the multicooker, turn it on, and wait until the water is boiling.
- Lay the taro (if using) and pork ribs into a serving dish.
- Transfer the dish to the multicooker and steam for 35 minutes on medium heat
- Remove excess water from sauce if pork ribs were meaty.
