Pasta With Zucchini And Beef Mince

  1. Add water, 1/2 teaspoon salt, and 1 teaspoon oil to a small pot and bring to a boil.
  2. Add the pasta once the water comes to a rolling boil.
  3. Cook the pasta for 15 minutes or until done, then drain in a sieve or colander.
  4. Defrost the beef mince. If in a freezer bag, defrosting in water works well.
  5. Finely dice the garlic.
  6. Slice the tomatoes into small wedges.
  7. Slice the zucchini into thin slices.
  8. Cut the onion into squares.
  9. Microwave the onion for 2 minutes.
  10. Microwave the tomatoes for 5 minutes.
  11. Stir fry the onion and set aside.
  12. Microwave the zucchini for 3 minutes.
  13. Stir fry the beef, adding salt and pepper to taste.
  14. Set aside a large bowl to hold the cooked items.
  15. Stir fry the garlic, then add the tomatoes and a couple of pinches of salt to taste.
  16. Add everything back into the wok.
  17. Stir to heat everything through and serve in separate bowls.
