Pancakes
Easy, soft and fluffy pancakes using simple pantry ingredients. This is a small-batch recipe with less baking powder to avoid a bitter aftertaste.
- Cooking Time: 15 minutes
- Serves: 2
Ingredients
- 1/2 cup (about 62 g) plain flour
- 1/2 tsp baking powder
- 1 tbsp sugar
- Small pinch of salt
- 1 whole egg
- 1/3 cup (80 ml) milk
- 1 tbsp peanut oil
Directions
- Thoroughly mix the flour, baking powder, sugar and salt in a bowl.
- Add the egg, milk and peanut oil.
- Mix until just combined. A few small lumps are fine.
- If the batter is too thick, add a small splash of milk.
- Lightly oil a frying pan and heat over medium heat.
- Pour or spoon the batter into the pan to make small pancakes.
- Cook for about 1–2 minutes, until bubbles appear and the edges begin to set.
- Flip and cook for another 1–2 minutes, until golden and cooked through.
- Serve warm.
