Beef And Bitter Melon Stir Fry

A simple stir fry with tender marinated beef, bitter melon and fragrant garlic.

Ingredients
- 250 g skirt steak
- 1 bitter melon
- 4 cloves garlic, lightly smashed
- Cooking oil
Directions
Prepare the beef
- Defrost the beef if frozen.
- Cut into stir fry strips.
- Put into a bowl or bag.
Marinate the beef
- Add 1 teaspoon soy sauce.
- Add 0.5 teaspoon oyster sauce.
- Add 0.5 teaspoon dark soy sauce.
- Add 3 teaspoons Chinese cooking wine.
- Add 1 heaping teaspoon cornflour.
- Add a dash of white pepper.
- Add 1 teaspoon sesame oil.
- Mix well and leave to marinate.
Prepare the bitter melon
- Cut the bitter melon in half lengthways.
- Remove the seeds and white pith.
- Thinly slice the bitter melon.
- Bring a pot of water to the boil.
- Blanch the bitter melon for about 2 minutes.
- Drain and set aside.
Cook the bitter melon
- Heat some oil in a wok.
- Add the 4 lightly smashed garlic cloves.
- Fry until fragrant.
- Add the blanched bitter melon.
- Stir fry for about 30 seconds.
- Remove the bitter melon and garlic from the wok and set aside.
Cook the beef
- Preheat the wok with oil until smoking, then add fresh cold oil to help prevent the beef from sticking.
- Add the marinated beef.
- Stir fry until fully cooked and fragrant.
Finish
- Add the bitter melon and garlic back to the wok.
- Toss everything together until combined.
- Serve immediately with rice.
