Pan Fried Braised Fish
Braised tilapia with a rich, savoury soy and bean paste sauce. Perfect with steamed rice.

Ingredients
- 1 whole tilapia, cleaned and scored
- 3–4 slices ginger
- 2 scallions, cut into sections
- 1 red chilli, sliced
- Green onions, chopped (garnish)
- Oil, for frying
Sauce
- 1 tbsp oyster sauce
- 2 tbsp light soy sauce
- ½ tbsp dark soy sauce
- 1 tbsp bean paste
- Pinch of salt
- 3 pinches of sugar
Directions
- Mix the sauce ingredients.
- Heat oil and pan-fry the tilapia over medium-low heat until golden on both sides.
- Add ginger, scallions and chilli. Stir-fry until fragrant.
- Pour in the sauce and add enough water to come halfway up the fish.
- Bring to a boil, then reduce to a simmer until the fish is cooked and the sauce thickens.
- Spoon the sauce over the fish, garnish with green onions and serve with steamed rice.
